My fathers positive 66th birthday dinner

I am blessed enough to have my father around to celebrate another one of his birthdays.  A few years back he had cancer and it was touch and go for a while, we didn’t know if he would make it.  Thank goodness he’s so stubborn!  For twelve years (and during the cancer bout) I lived in another city and sadly missed many of my family members birthdays.  A little advice if you’re reading this post, call your family and tell them that you love them.  Time is fleeting and you’ll likely never regret telling someone you love them.  A funny thing about negativity and positivity is that you will never regret being positive. The chances that you will regret something that you do or say when being negative is very very high.  You can never take back hurting someone.

I think dinners are my favorite meals, because you can reminisce on all of the day’s wonderful events over good food and company.  Last night started with wild mushroom ravioli (my dads favorite) followed up by a juicy ribeye, sautéed sweet corn and garlic mashed potatoes.  The night concluded with carrot cake and a chocolate lava cake dessert.  In case you’re wondering, dinner was at Flemings.  We don’t usually eat so lavishly, so it was a real treat.  We laughed about how my sister almost fainted when a field mouse jumped off a towel rack towards her.  If I took away anything last night, it was to relish in the time I have with my family.
